Celebrate the flavors of fall at Powderhorn Mountain Resort with our Harvest Pairing Dinner, an exquisite four-course meal designed to bring together the best of the season. Featuring local ingredients from Green Junction Farmstead, Rocking W Ranch, and Talbott Farms, this menu highlights the bounty of fall and the warmth of harvest festivities. Paired with the crisp, refreshing ciders from Talbott Farms, each course is thoughtfully crafted to embrace the essence of autumn.

Course #1 House-Made Harvest Cheeseball with Gourmet Crackers and Sweet Potato Fries. Start your harvest celebration with a shareable dish designed to bring everyone to the table. Our creamy, flavorful harvest cheeseball is paired with crispy sweet potato fries and served with gourmet crackers.
Course #2 Sweet Potato and Leek Chowder, Fanned with House-Smoked Pacific Salmon. This warming, velvety chowder combines the earthy sweetness of sweet potatoes with the delicate flavor of leeks, while house-smoked Pacific salmon adds a smoky depth. Served alongside zucchini and cheese drop biscuits.
Course #3 Maple Roasted Chicken and Acorn Squash. A trio of bold flavors makes this course unforgettable. Maple syrup adds natural sweetness to the roasted chicken, grainy mustard delivers a zesty punch, and fresh rosemary provides an aromatic woodsy finish. Paired with roasted acorn squash, this dish perfectly encapsulates the flavors of fall.
Course #4 Herb-Crusted Cranberry Rack of Lamb with Herbed Butter Baby Carrots. A show-stopping entrée, this herb-crusted lamb rack is served with a tangy cranberry mint chutney and accompanied by tender herbed butter baby carrots that complement the richness of the lamb.
Course #5 Pear Almond Tart and Gourmet Pumpkin Pie Truffles. The pear almond tart features a buttery almond filling paired with juicy Palisade pears, while the pumpkin pie truffles add a sweet and indulgent touch.
