Join us for a culinary journey around the globe with a five-course food tour, showcasing the finest ingredients from local Western Slope farms and ranches. Featuring fresh herbs and greens from Green Junction Farmstead in Palisade, Colorado, and cheese from Rocking W. in Olathe, Colorado, along with Colorado-raised lamb and beef, this international menu will take you from the vineyards of Europe to the deserts of South America, and beyond. Every dish is thoughtfully paired to complement the flavors, offering an immersive dining experience you won’t forget.

Course #1 (Europe) Farro Salad and Ricotta Crostini.Kick off our world tour with a dish rooted in European traditions. This farro salad features an ancient wheat grain, known for its nutty, chewy texture, and is paired with fresh apples, walnuts, pecorino cheese, dates, and fragrant herbs. Tossed in an apple cider vinaigrette, this light yet flavorful dish is served with a crispy ricotta crostini.

Course #2 (Asia) Sushi Experience.Next, we venture to Asia for a bite-sized sushi experience showcasing a variety of flavors. While sushi is synonymous with Japan, this course explores regional innovations, including nigiri, maki, and sashimi. Nigiri features rice topped with a delicate slice of fish, maki offers rolled sushi filled with rice, seaweed, and fresh ingredients, while sashimi delivers thinly sliced raw fish. This dish highlights the artistry of sushi from different corners of Asia, offering a harmonious blend of textures and tastes.

Course #3 (Australia) Garlic Basil Barramundi Skillet with Tomato Butter Sauce.From the oceans of Australia, we present barramundi, a mild, flaky white fish. Served in a skillet with garlic, basil, and a rich tomato butter sauce, this dish exemplifies the sum of simple yet exquisite ingredients.

Course #4 (Africa) Shekla Tibs with Injera.Our next stop takes us to Africa with Shekla Tibs, a beloved Ethiopian dish made from sautéed lamb and beef, paired with vibrant vegetables and served with injera, a traditional sourdough flatbread. The tender meats are cooked in an aromatic spice blend, while the tangy injera provides the perfect vessel for this hearty, flavorful combination.

Course #5 (South America) Tres Leche Cake with House-Made Vanilla Ice Cream.Conclude your world tour with a sweet touch from South America. Our Tres Leche Cake is a light sponge cake soaked in three types of milk—sweetened, evaporated, and heavy cream—then topped with a rich dulce de leche sauce. Paired with house-made vanilla ice cream, this indulgent dessert offers a perfect balance of creamy, sweet flavors.
