Our talented chefs, who will artfully craft a series of delectable dishes inspired by the seasonal bounty of the mountains. Each course will be thoughtfully paired with exceptional craft brews, expertly chosen to enhance and elevate your dining experience.

  • Course 1: Casa Wedge Salad with Grilled Watermelon

    • This Tex-Mex-inspired wedge salad is lightly grilled and topped with mild Mexican Cotija cheese and a creamy avocado dressing. The high water content of the watermelon creates a concentrated flavor when grilled, pairing perfectly with a refreshing American wheat beer. This beer, lacking the heavy banana/clove flavors of German wheat ales, offers a clean taste that complements the grilled fruit. 
    • Paired with Blonde

  • Course 2: Cedar Planked Shrimp and Elote

    • Shrimp are tossed in a light pesto of parsley, garlic, lemon zest, olive oil, and red pepper flakes, then cooked on a cedar wood plank. This method imparts a subtle smoky flavor without overwhelming the delicate shrimp. The dish is paired with a Mexican-style street corn, is grilled and covered in mayo, sour cream, spices, lime juice, and cheese.  
    • Paired with Mexican Lager

  • Course 3: Chef's Award Winning Applewood Smoked Baby Back Ribs* 

    • These Memphis-style BBQ ribs are rubbed with a special blend and served on a bed of toasted seed slaw. The BBQ sauce enhances the dish's richness and complements the slaw's toasted seeds. This classic BBQ combination is a must try.

    • Paired with Stout

    • *Awards: 1st Place Fruita Fall Festival, 1st Place Gateway Canyons Wild West BBQ & Cars, 2nd Place Grand Junction Arbor Festival, 3rd Place Pork & Hops Challenge  

  • Course 4: Smoked Brisket - Texas BBQ

    • Our Texas-style brisket is slowly smoked with cherry and pecan wood, resulting in rich, bold flavors that pair excellently with a citrusy IPA that cuts through the fatty meat. Enjoy the brisket with two signature BBQ sauces:
      -Chef's Stout BBQ Sauce - Kansas City Style
      -Chef's Palisade Peach BBQ Sauce - South Carolina Style

    • Texas-style BBQ Brisket paired with Double IPA

    • Palisade Peach BBQ Sauce paired with Surprise Seasonal
